When you want something super nourishing and warming the simple foods can really go a long way! Growing up as a kid, I ate so many lentils as my mother is from Colombia. This is a healthy twist to a Colombian favorite. Instead of white rice, I used quinoa and added fresh greens to make it fully balanced.
Ingredients:
1 -2 Tbsp Artisana Naturals classic Almond butter
1 Tbsp balsamic vinegar
2 Tbsp olive oil
Pinch of salt and pepper
Dash of water to make smooth
Salad:
1 cup cooked green lentils
1 cup chopped kale
1 cup cooked quinoa
1/4 cup diced cucumbers
1/4 ripe avocado, cubed
Mix all in a bowl and serve!
